A Virtual Baking Adventure with Running Into Joy

Last month, I was invited by blogger Amanda Kay Oaks for a completely different kind of adventure. An adventure in baking!

Dear Amanda, I miss seeing you face-to-face, but the cake you leave on my porch while I awkwardly wave to you from inside the window makes things a little bit better.

On her blog, Running Into Joy, Amanda pursues the balance between physical and mental health through self-care. Part of that pursuit is an exciting new venture baking her way through Great British Baking Show’s official cookbooks.

While I always appreciate the gentle reminders of self-love on her blog, I particularly love The Great British Blog Off for a couple reasons. One, I enjoy reading her escapades while searching for sometimes obscure ingredients (such as when her food-grade rose petals blew away upon delivery). Two, since Amanda also happens to be one of my BFFs, surprise slices of cake have appeared on my porch more frequently than they used to.

So, I chose a tray cake to virtually bake along with her because it seemed like it would mostly be stress-free (HA) and we set aside a late morning for baking away!

  1. I am fully aware that baking and cooking are adventures!  One never knows what the end result will be! In my case it is usually a disastrous adventure lol!
